Ceviche Kind of Weather

One of the perks of working from my home office is that I get to COOK! It's been ceviche kind of weather here in San Rafael, so yesterday I bought shrimp and cooked it in lime/lemon juice overnight. I was able to top it off with some fresh avocados and "Have'A Corn Chips," which by the way are MY FAVORITE corn chips ever. They taste so good, you can eat them by themselves! Anyhow, I put the ceviche in a salsa bowl Chris and I got from Isla Mujeres, Mexico from our honeymoon. I think it makes the ceviche taste that much better :D

Now, what's ceviche and chips without something good to wash it down with right?? Well, I'm from the South so you know I LOVE me some sweet tea! Being in California presents an obvious problem to that love, but my dear husband found some sweet tea at Trader Joe's! It's not quite the same, but for now it gets the job done! :D

Until next time, I'd love to know what's cooking in your kitchen!!
